mo' better meaty meat burgers
makes about 8 burgers

  • 1 1/2 lbs ground beef
  • 1 leek or 2 green onions, light green and white parts only
  • 1 cup or so of mustard greens or baby spinach
  • 1/2 to 1 cup of seasoned breadcrumbs
  • 2 eggs
  • salt and pepper to taste

  1. mince greens and onions very very finely. combine in a bowl and set aside.
  2. put the ground beef in a large mixing bowl.
  3. knead it with your hands until it begins to loosen, a minute or so.
  4. add one egg, knead it in.
  5. add bread crumbs and minced greens/onions alternately, a little bit at a time, incorporating them into the beef completely before adding more.
  6. add the other egg, knead it in.
  7. add salt and pepper.
  8. when all eggs, breadcrumbs, and vegetables have been added, cover the bowl and set it in the fridge for 30 minutes.
  9. form patties one at a time by grabbing a large handful of meat mixture and rolling it into a ball and then flattening it.
  10. wrap each pattie in tinfoil until ready to fry or grill.
