southside white bean soup
- (2) 16oz cans cannelini beans
- (1) 28oz can crushed tomatoes
- 1 pkg italian or portuguese sausage (10-16 oz)
- 1 bunch arugula
- 1 white onion
- 8 cloves garlic
- 2 cups broth, chicken or vegetable
- olive oil
- fennel seeds
- dried thyme
- cumin powder
- cayenne pepper
- mince the onion and chop the garlic. in a dutch oven or other large pot, heat a tablespoon or so of the olive oil. fry the onion and the garlic. fry until the onion becomes translucent.
- chop the sausage into chunks. add it to the pot with the garlic and onions.
- add the spices to taste. i used about 2-3 teaspoons of everything except the cayenne pepper, which i used more sparingly. continue frying for a minute or two.
- drain your beans and rinse them. add them to the frying pot and toss them with the sausage and onions.
- roughly chop the arugula and add it to the pot. toss briefly. add the can of tomatoes.
- stir everything together for a minute or two, and then add the broth. salt to taste.
- simmer on low heat for 45 minutes. add water if the soup becomes too thick.
