southside white bean soup

  • (2) 16oz cans cannelini beans
  • (1) 28oz can crushed tomatoes
  • 1 pkg italian or portuguese sausage (10-16 oz)
  • 1 bunch arugula
  • 1 white onion
  • 8 cloves garlic
  • 2 cups broth, chicken or vegetable
  • olive oil
  • fennel seeds
  • dried thyme
  • cumin powder
  • cayenne pepper

  1. mince the onion and chop the garlic. in a dutch oven or other large pot, heat a tablespoon or so of the olive oil. fry the onion and the garlic. fry until the onion becomes translucent.
  2. chop the sausage into chunks. add it to the pot with the garlic and onions.
  3. add the spices to taste. i used about 2-3 teaspoons of everything except the cayenne pepper, which i used more sparingly. continue frying for a minute or two.
  4. drain your beans and rinse them. add them to the frying pot and toss them with the sausage and onions.
  5. roughly chop the arugula and add it to the pot. toss briefly. add the can of tomatoes.
  6. stir everything together for a minute or two, and then add the broth. salt to taste.
  7. simmer on low heat for 45 minutes. add water if the soup becomes too thick.
