2003-06-03 - 10:24 a.m.

just got back from a whirlwind trip to the old stomping grounds. there is something so refreshing about seeing old friends. there's no need for bullsh*t. there's no subterfuge. i enjoyed the low-stress sunshine vibe of my home state. barbequed oysters. fine wines. homemade lasagna. long warm nights listening to records. bottomless cups of coffee. steam baths and sushi. everything and everyone tasted delicious.

with possibly one exception. special to the maitre 'd at 'rnm' on haight and steiner: its obvious you don't live in the neighborhood. even new yorkers aren't that rude.

i'm still waiting for my brain to catch up with my body. jet travel always introduces an inconvenient mind-body split for me. i think by this evening i will be wholly integrated again.

in the meantime, why not try a delicious recipe?

WALDORF SALAD

serves 2

  • for the mayonnaise:

    • 1 egg

    • 1 cup peanut oil

    • 1 tsp salt

    • 1 tbsp rice wine vinegar OR juice of one lemon

    • 1 tsp mustard (optional)

  • two apples (preferably golden delicious)

  • 1 cup cashews (or walnuts)

  • lettuce leaves

  1. make the mayonnaise: add all mayonnaise ingredients EXCEPT oil to a blender. turn the blender on at a low speed. add the oil in a slow, steady stream while blending. continue to add salt or vinegar to taste. i like to double this recipe so i have some mayo for sandwiches the next day.

  2. core your apples. chop them into bite-sized chunks.

  3. toast your nuts in a hot frying pan on high heat. keep the pan moving until nuts are just turning brown.

  4. toss nuts, mayo, and apples together in a salad bowl.

  5. serve on a bed of lettuce leaves.
